Shanghai Style Cold Noodle (Lun Mien)
Ingredients:
1 lb Chinese noodles or Italian egg noodles
3 tablespoons of peanuts butter
1/2 tablespoon of sesame oil
3 tablespoons of vegetable oil
1/4 teaspoon of MSG (optional)
1 teaspoon of sugar
1-2 tablespoons of Chinese rice vinegar
4 tablespoons of soy sauce (light)
1/2 cup of chopped coriander (cilantro)
1-3 teaspoons of red chill oil
1/4 cup of chopped green onions
Some cold water
Method of Cooking:
Bring a pot of water to boiling. Put the noodles in and cook until the
noodles become soft (do not overcook!). Rinse the cooked noodles by cold
water and drain them by a colander. Then, mix the noodles with vegetable
oil.
Blend peanuts butter with some cold water, soy sauce, MSG, sugar, sesame
oil, red chilly oil, Chinese vinegar to make a thin spicy paste. Pour the
spicy mixture into the noodles and stir them with a pair of chopsticks or a
fork until the paste coat the noodles evenly. Sprinkle chopped
coriander and green onions on the top and the noodles are ready to serve.
(This dish often serves with stir-fryed bean sprouts and cold meat dishes.)
Note:
Since I never measure ingredients when cooking and everybody has his/her
own taste, please feel free to make some adjustments to the quantity of
various spices used in this recipe. I 'd like to hear from you after you
try this recipe. Good luck with the Shanghai Cold Noodles!!!
